A few good eats...

Okay friends, I have found 3 recipes I want to share with you.

1 is vegan, 1 is vegetarian, and 1 is a vegan dessert. Your tastebuds are about to be so very satisfied and your fridge well-stocked.


I have become very strict in my meal-prep due to my long work days and musical extra-curricular which typically follow. These often result in me being way too tired to cook. During my Daniel Fast it went to a whole new level, creating my menu before going to the grocery store and making sure I have a few key ingredients constantly in stock. If I am well-stocked, this typically results in my grocery budget remaining in tact. Also, as I have branched out and explored new recipes my "on hand" ingredients that are a bit atypical has grown (bonus for fellow foodies!).

Chocolate Tahini Oat Bars

Here's why you should try these recipes -

  1. Megan's Wild Rice & Kale Salad: So in this recipe Kate gives the option of feta or goat cheese. I opted for goat cheese because that's what I had in the freezer. Honestly I think this is the best choice, it adds a rich flavor and creamy texture to the citric taste of the homemade dressing, the crunch of the red pepper, and the nutty flavor of the wild rice. This makes a great summer/spring dish and doesn't take very long to make at all.

  2. Thai Green Curry with Spring Vegetables: If you love Thai food and want to capture a bit of that flavor this is an easy dish to put together and provides you with a good deal of left-overs. I must admit I didn't stick to just the veggies Kate had listed in the recipe (asparagus, spinach, carrots, small white onion), and added bean sprouts and eggplant. I also added to the garnish (cilantro and fresh squeezed lime) fresh cut tomato and jalapeño pepper. It's a delish dish.

  3. Chocolate Tahini Bars: Oh.My.Sweet.Dish. Make this, freeze it, and EAT. It's the healthiest dessert that kicks that chocolate craving and melts in your mouth (if you're patient enough to let it).
