Flourless Blueberry Pancakes

Ok guys, let’s talk about an easy & quick breakfast recipe that Emilee Eats just recently posted. Not only was this easy to make and healthy, but it was YUMMY! I made it last weekend and had enough leftovers for 2 more meals. Her recipe gives us pancakes are vegan, no flour, no added sugars. As per usual, I had to modify the recipe to fit my pantry...and I'm not vegan, so I don't buy pantry items with this as a requirement. Another great thing about this recipe is that you could easily sub in different fruit. In addition to how I made the recipe, I'll attach a link to her original recipe. Sad note (yes, I meant to type 'sad'): My food processor is broken and I don’t own a blender, so I gave it a go on my NinjaBullet. I was so nervous that I wouldn't be able to squeeze all of the ingredients in there. Definitely worried for no reason!

Prep Time: 5-10 mins

Cook Time: 15-20 mins (depends on pan size/heat)

Total Time: 20-35mins

Yield: 9-12 pancakes


Ingredients:

- 1 cup rolled oats

- 1 cup non-dairy milk or water, plus more if desired (I used coconut milk)

- 1/2 cup mashed bananas

- 1 tablespoon flax meal

- 1 tsp chia seeds

- 2 teaspoons baking powder

- 1 teaspoon vanilla extract

- 1/2 teaspoon baking soda

- 1/4 teaspoon ground cinnamon

- 1/8 teaspoon salt

- 1 cup blueberries

- peanut/almond butter, for topping

Make it:

1) Preheat a medium skillet or griddle over medium heat.

2) Lightly grease with cooking spray/coconut oil.

3) In a blender or food processor, add all ingredients except the blueberries.

4) Blend until completely smooth, adding more liquid if desired for thinner pancakes. (I added more oats to mine to thicken it up).

5) Let the batter sit for 5 minutes.

6) Gently fold in blueberries; stir to incorporate evenly.

7) Use 2 tablespoons of batter to form each pancake.

8) Cook on one side until bubbles begin to form, about 3-5 minutes. Flip and cook about 3-5 more minutes.



9) Serve with a drizzle of your choice (I chose peanut butter), and your choice of fruit (I chose strawberries).
