I was in a crunch the other day, the sun had set, I needed to make a lunch that was healthy AND could be eaten in the car. What could I make that was healthy, had enough protein, and would be mobile. TUNA! I had a few sandwich thins shoved somewhere in the fridge.
I don't keep/use mayonnaise (or Miracle Whip) anymore, and I still had a bit of Siggi's plain yogurt in the fridge. Or so I thought. I hadn't gotten into it in a while...longer than I'd thought. Have you ever tasted spoiled, rancid yogurt? No? Well, don't. It sticks with you for a while. I then Googled how to tell if Tahini has gone bad, to prevent another sour taste-test.
What followed was a series of 'googles' in what are some ways to make tuna salad involving tahini. Below is my creation. My measurements aren't specific, because it was done to taste. Don't hate, just experiment.
Spicy Tuna Salad
- 1 can of tuna
- less than 1 tbsp of tahini
- dash of extra virgin olive oil
- dash of red pepper
- dash of garlic powder
- dash of onion powder
- dash of curry/turmeric mix
- dash of lemon juice
- 1 tsp of dried dill
Mix it all together.
Taste test to your preference.
Put on either sandwich thin, homemade bread, a huge piece of lettuce (or chard), and add whatever toppings you like. If you can do dairy, a slice of cheese and mustard with tomato go a long way...or plain...
Either way try it, taste it, and enjoy a delish healthy lunch.
