It's been a weird weekend. Between being accident-prone (resulting in the loss of a side mirror) and the continued extra expense of living in my new place. The result: me craving something with ricotta that would be comforting, but not add carb-guilt to the list that your typical lasagna would make me feel. So I decided to do a noodle-less, meatless lasagna. The recipe you'll see below is a culmination of two-recipes I found online.
Vegetarian Noodle-free Lasagna
Ingredients:
- 1 eggplant
- 2 zucchini
- Fresh spinach (eye ball the amount you'll use)
- 1 cup chopped, fresh mushrooms
- 2.25 cups of ricotta cheese
- 2 eggs
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp salt
- 1 tsp oregano (I used my dried Hot & Spicy from last year's garden)
- 1/2 tsp basil (I did not add this because my pasta sauce already had it in)
- Dash of red pepper
- Dash of nutmeg
- 1/2 cup of shredded mozzarella
- 2 c pasta sauce (I used Simply Organics Tomato Basil)
Directions:
1. Preheat the oven to 425 degrees Fahrenheit. Pull your 9x13 pan to have it ready.
While your oven is pre-heating:
2. In medium sized bowl mix your ricotta, eggs, salt, oregano, and nutmeg together. Set aside.
3. In a separate bowl, mix the pasta sauce, garlic powder and onion powder. Set aside.
4. Slice your veggies, medium to thin (up to you).
5. Poor some of your pasta sauce (about 1/2 of it) into the pan and smooth/even out.
6. Begin evenly layering your veggies in and spread your ricotta/spinach mix on top.
[I started with eggplant, ricotta mix, mushrooms].
7. Change directions of the next layer (so if you went perpendicular in the pan, go horizontal) and repeat your layering/spread.
8. Repeat until pan is full or you're out of veggies (I was able to get 3 layers, 2 eggplant and 1 zucchini).
9. Evenly distribute your remaining pasta sauce on top.
10. Sprinkle the remaining shredded mozzarella on top.
11. Cover with foil and bake for 30 minutes.
12. Cook uncovered for 15 more minutes.
